We have over 24,000 New Testament manuscripts and fragments in Greek and other languages, giving textual critics a huge body of evidence for identifying scribal variations. Even if you isolate 16 disputed verses, that’s only about 0.05% of the Bible’s 31,000+ verses, and the overwhelming majority of those textual variants do not affect any Christian doctrine. Islam doesn’t have the same kind of surviving manuscript tradition for the Qur’an. Under Caliph Uthman, competing codices were ordered to be destroyed after a standardized text was produced. That means those destroyed copies can’t now be examined against the standardized text to determine exactly what readings they contained. In other words, once the alternative witnesses were destroyed, there was no longer the same documentary evidence available for comparison.
