Just because you don’t have a pizza oven doesn’t mean you can’t make delicious pizza at home. A few small techniques can turn an average pizza to a phenomenal one. If using a cookie sheet roll it out as thin as possible and bake first with only the sauce (and veggies if using) and then add the cheese so you can get a nice crust without risking burning the cheese. If you like a thicker pizza I recommend using a cast-iron pan. I made 2 pizzas, one thin and one thick. Cover and let sit in a warm place for about 45 minutes, until bubbly. Add 2 cups warm water, followed by 4 cups bread flour, and mix. Add the salt, then gradually add additional flour as needed until the dough forms a ball. Depending on your flour and humidity, this may take another 2–4 cups. Turn the dough onto a floured surface and knead until smooth and elastic. The dough should be slightly tacky but able to hold its shape. If it isn’t able to hold its shape it’s too runny, gradually add more flour 1/4 cup at a time until it is workable.  Place in a greased bowl, cover, and allow to proof until doubled in size. Fresh Tomato Pizza Sauce * 4 Roma tomatoes, chopped * 1 cup tomato purée * ½ white onion, chopped * 4 whole garlic cloves * 7–8 fresh basil leaves * 2 tsp dried oregano * ½ cup water * Salt & pepper, to taste * Pinch of cayenne or red pepper flakes, optional Sauté the onion, Roma tomatoes, and garlic until softened. Add the tomato purée and ½ cup water and simmer for 20–30 minutes to deepen the flavor. Stir in the oregano and fresh basil, then transfer everything to a blender and blend until completely smooth. Taste and adjust the salt and pepper. Add cayenne or red pepper flakes if you like a little heat. Assemble & Bake Preheat oven to 450°F. Divide the dough into 3 smaller pizzas or 2 medium pizzas. For a sheet-pan pizza, roll the dough into a thin rectangle to fit your pan. Dock the dough all over with a fork, then spread with tomato sauce. Bake at 450°F for 10 minutes. Remove from the oven, add your cheese, and bake for another 10 minutes, or until the crust is golden and the cheese is melted and bubbly. For veggie pizza: Add the vegetables along with the tomato sauce for the first 10-minute bake. Remove from the oven, add the cheese, then bake for another 10 minutes. Slice and serve hot!
