One of the best names for a dish, and one of the cosiest too. With creamy mashed potato, buttery cabbage and onions, all baked under a generous layer of bubbling cheese. Serves 4-5 greedy gits Ingredients 1kg floury potatoes, peeled and chopped 150g very finely chopped thick smoked bacon lardons 50g butter 1 small savoy cabbage, finely shredded @ocadouk 2 large onions finely sliced 100ml whole milk OR sour cream 1 tsp flaked salt @blackthornsalt Black pepper to taste 2 tbsp finely chopped parsley and chives Pinch of nutmeg 150g mature Cheddar, grated, I used Red Fox Method Boil the potatoes in well salted water until completely tender. Meanwhile, melt half the butter in a large frying pan and cook the bacon until golden. Then gently cook the onion for 8 to 10 minutes until soft. Add the shredded cabbage and cook for another 8 minutes, until tender and starting to catch slightly at the edges. Drain the potatoes really well, then mash with the remaining butter and warm milk until smooth. Season with salt, plenty of black pepper and a little nutmeg. Fold the cabbage and onions through the mash add the herbs. Spoon into a buttered baking dish and smooth the top. Scatter generously with the grated Cheddar. Bake at 200°C / 180°C fan dor around 20 to 25 minutes, until bubbling and deeply golden on top.
