One-Pot Veggie Pasta Ingredients Olive oil 1 small onion, finely diced 1 tsp minced garlic 2 tomatoes, finely chopped 2 sticks celery, finely chopped 1 zucchini, grated 2 tbsp tomato paste Salt Pepper Paprika Vegeta, to taste 1 jar Mutti Sugo tomato sauce Thickened cream Dry pasta Water, as needed Grated cheese, to top Method Chuck a good splash of olive oil into a large pan and add your onion. Start sautéing, then chuck in the garlic. Add the tomatoes, celery and grated zucchini, then chuck in the tomato paste. Give everything a really good mix and let it cook until the onion is translucent and the veggies are nice and soft. Season with salt, pepper, paprika and Vegeta. Give it another good mix. Pour in the jar of Mutti Sugo, then rinse the jar out twice with water and chuck that in too. You want plenty of liquid because the pasta is going straight in dry. Add a good splash of thickened cream, then chuck in your dry pasta and give everything a really good stir. Pop the lid on and let it cook, stirring every now and then. As the pasta cooks, the sauce will reduce, so add more water whenever you need to loosen it up and keep the pasta cooking. Once the pasta is almost cooked, chuck a good handful of grated cheese over the top. Pop the lid back on and let the cheese melt while the pasta finishes cooking. Once the pasta is cooked al dente and the sauce is nice and creamy, dish it up. And that's it. One pan, heaps of veggies and absolutely demolished by my kids.
