Adicione o azeite de oliva e mexa lentamente para incorporar. Acrescente o mel dourado e continue misturando até obter uma massa uniforme. Coloque as sementes de romã e os frutos secos, distribuindo por toda a massa. Deixe a mistura descansar enquanto o forno de barro aquece com lenha. Coloque a massa em uma bandeja de barro e espalhe cuidadosamente. Asse lentamente até que o mel forme uma camada dourada sobre a superfície. Observe até que o bolo fique firme nas bordas e macio no interior. Retire do forno e espere alguns minutos antes de finalizar. Adicione um pouco mais de mel e sementes frescas de romã para decorar. Sirva ainda fresco com frutas do campo e pão artesanal.
