Pumpkin Pancakes 🥞🤎🎃 The famous Luke’s pancakes from Gilmore Girls, topped with cinnamon butter and maple syrup!🤎 Ingredients Pancakes * 120 g plain flour * 1½ tsp baking powder * ½ tsp baking soda * ¼ tsp salt * 1 large egg * 30 g unsalted butter, melted * 25 g brown sugar * 1 tsp vanilla extract * 180 ml buttermilk * 120 g pumpkin purée * 1 tsp pumpkin pie spice or cinnamon Cinnamon Butter * 113 g unsalted butter, softened * 1 tsp cinnamon * Pinch of salt * 2 tbsp honey * 2 tbsp icing sugar For Serving * Butter, for cooking * Maple syrup Instructions 1. Make the cinnamon butter: Mix the softened butter, cinnamon, salt, honey and icing sugar until smooth and creamy. Set aside. 2. Make the batter: Whisk together the flour, baking powder, baking soda, salt and pumpkin spice. In a separate bowl, whisk the egg, melted butter, brown sugar, vanilla, buttermilk and pumpkin purée until smooth. Gently mix the wet ingredients into the dry until just combined. Don’t overmix. 3. Cook: Heat a non-stick pan over medium heat and lightly butter. Add about 60 ml (¼ cup) batter per pancake. Cook for 2–3 minutes, until bubbles form and the edges are set. Flip and cook for another 1–2 minutes. 4. Serve: Stack the pancakes and top with a generous spoonful of cinnamon butter and maple syrup. Enjoy! 🤎 Tip: Keep the heat around medium rather than high, as pumpkin pancakes can brown quickly before cooking through. #baking #bakingrecipe #pumpkin #pancakes #recipes
