@jackieprcoffee: Ingredients and recipe * Bacon, ham, or any meat of your choice or add frozen veggies. * 2 tablespoons olive oil (if not using bacon) * 1 onion, chopped * Olives (pitted) * Roasted red peppers * Sofrito (homemade or store-bought) * 1 can of your favorite beans * 1 teaspoon garlic powder * 1 teaspoon onion powder * 1 teaspoon chicken bouillon powder (any flavor works) * 1 teaspoon paprika * 1 teaspoon oregano * 1 teaspoon adobo seasoning * 1 teaspoon salt (if you don’t have adobo) * Medium-grain Goya rice 1 cup * Tomato paste * Broth of your choice Rice-to-broth ratio: For every 1 cup of medium-grain rice, use 1½ cups of broth. Instructions 1. Prepare your meat. Cook your bacon, ham, or meat of choice. If you’re not using bacon, add 2 tablespoons of olive oil. For a vegetarian version, simply skip the meat and sauté your vegetables. 2. Sauté the vegetables. Add onions, olives, roasted peppers, and sofrito. If you don’t have sofrito, you can find frozen sofrito in Walmart’s frozen section or simply chop up your favorite vegetables. If you have culantro or cilantro it will give it a great aroma . Any combination works! 3. Add the seasonings. Add garlic powder, onion powder, chicken bouillon, paprika, oregano, and adobo. If you don’t have adobo, use 1 teaspoon of salt instead. 4. Add the beans and tomato paste. Mix everything together, then add your favorite canned beans and tomato paste. 5. Add the broth and rice. Pour in your broth using the correct rice-to-broth ratio. Let all the vegetables and seasonings come to a boil for a little bit to bring out the flavors. Add the rice and stir everything together. 6. Let the liquid evaporate. Allow the rice to cook uncovered until the liquid dries up, just like you see in the video. 7. Cover and steam. Lower the heat to LOW. USE A TIMER. Cover the rice with aluminum foil and plantain leaves. You can find frozen plantain leaves at Walmart or most supermarkets. If you have access to a plantain or banana tree, fresh leaves work too! 9. After 15 mintutes are up turn the rice one time and cover again the same way you did the first time and cook it for 10-15 minutes and enjoy with a potato salad, meat of your choice or any side dish you love. Yo cosino haci Siempre y todo el mundo que prueba mi comida quieren que les siga cosinando por siempre. Hasta me dicen que yo cosino como las abuelitas de años atrás en BC aquellos tiempos. Hechale cilantro y recap dos Sobrs de sobre Otis de jamón en polvo y te va a salir mucho mejor!!👍
