Recipe — Serves 4–6
Ingredients
* 2 tbsp butter
* 1 small yellow onion, diced
* 3 garlic cloves, minced
* 2 tbsp all-purpose flour
* 5 cups low-sodium chicken or vegetable broth
* 4 cups broccoli florets, cut into small bite-size pieces
* ¾ cup dry ditalini pasta
* ¾ cup heavy cream
* ½ cup freshly grated Parmesan
* Salt and black pepper, to taste
Instructions
1. Cook ditalini in salted water according to package directions until al dente. Drain and set aside.
2. Melt butter in a large pot over medium heat. Add onion and cook for about 5 minutes, until softened.
3. Add garlic and cook for 30 seconds. Stir in flour and cook for 1 minute.
4. Slowly whisk in broth. Add broccoli, bring to a gentle simmer, and cook for 8–10 minutes, until tender.
5. Stir in heavy cream and warm gently for 2–3 minutes without boiling.
6. Remove from heat and stir in Parmesan. Season with salt and pepper. Add cooked ditalini just before serving.
Helpful hint: If you expect leftovers, keep the pasta separate and add it to individual bowls. This prevents it from soaking up the broth and becoming soft.
