Slow Cooker Beef & Onion Potato Nachos This is my idea of proper comfort food 🤤 slow cooked beef in a rich onion gravy piled over crispy potato rounds, topped with melted mozzarella, crispy onions and loads of extra gravy on the side… get in ma belllay plus it’s high in protein too 🤌🏼 Ingredients (serves 4):
1 onion sliced
2 tsp chopped garlic
1 tbsp tomato purée
1 tbsp Worcestershire sauce
30g caramelised onion chutney
500ml beef stock
1 tsp dried thyme
Salt
Black pepper
700g slow roasting beef joint
20g beef gravy granules For the potato nachos
1000g Maris Piper potatoes, thinly sliced into rounds
1 tsp garlic granules
1 tsp smoked paprika
Salt
Black pepper
Oil spray To finish
100g mozzarella grated
2 tsp crispy onions
Fresh parsley chopped 💞Add the onion, garlic, tomato purée, Worcestershire, chutney, stock, thyme, salt and pepper to the slow cooker. 💞Sear the beef on all sides & don’t forget like me 🤣 Add the beef, turn through the sauce and cook on LOW for 6-8 hours, or until tender.  💞During the final hour, slice the potatoes into thin rounds, around 3mm. You can soak them in cold water to make them crispier. 💞Remove the beef and stir the gravy granules into the cooking liquid. 💞Slice the beef across the grain, chop into bite-size pieces, return to the gravy and cook on LOW for another 30 mins. 💞Drain and thoroughly dry the potatoes if soaked. Season with garlic granules, paprika, salt and pepper and spray with oil. Air fry at 200°C for 15-18 mins until crisp, turning halfway. Alternatively, oven bake for 25-30 mins. 💞Arrange the potatoes on a tray, spoon over the beef and scatter with mozzarella. 💞Grill for 2-3 mins until melted, then finish with crispy onions and parsley. 💞Serve with the remaining beef gravy.
