Okay life hack warm it up in the microwave, add a splash of cold water or milk and shake it hard. The oils will rebind and it’s good as new!

it's actually science! heating up cheese in a microwave breaks apart the bonds between the protein and oil, which is why it's looking like that. it's also why reheated pasta tastes grainy.

Heating it either on the stove or in 15 second intervals in the microwave prevents this! The reason the sauce splits is because of the speed the microwave heats it at. Just gotta slow it down and it’ll still be creamy.

Oils will always separate from fat under excessive heat or acid. It’s called splitting; not specific to Olive Garden or pasta lmao. Heating it up slowly in increments

This is why I add half and half or heavy cream to it before microwaving it. It turns back into sauce and not just oil
