One Skillet Cowboy Butter Chicken Orzo This creamy Cowboy Butter Chicken Orzo is the perfect easy weeknight dinner the whole family will love 🤎 My friend @mamasdownsouthkitchen makes a similar recipe all the time and it looks so good I had to give it a try. Servings: 4–6 Ingredients 1 lb boneless, skinless chicken breasts, diced into bite-sized pieces ½ yellow onion, diced 2 tbsp olive oil 2 tbsp butter 1 tbsp cowboy butter seasoning, plus 1 tsp more ½ tsp garlic powder, plus more to season the broth ½ tsp paprika, plus more to season the broth ½ tsp black pepper, plus more to season the broth ½ tsp salt, plus more to season the broth 2 cups uncooked orzo 1–2 tbsp Dijon mustard 2 cups chicken bone broth + 1½ cups water (OR substitute both with 3½ cups chicken broth) ½ cup half & half ⅔ cup freshly shredded Parmesan cheese Fresh parsley, for garnish Extra Parmesan cheese and cowboy butter seasoning, for serving Instructions 1. Add your diced chicken to a bowl with olive oil, 1 tbsp cowboy butter seasoning, garlic powder, paprika, black pepper, and salt. Toss until the chicken is evenly coated. 2. Heat a large skillet over medium-high heat and melt 2 tbsp butter. Add your seasoned chicken and diced onion. Cook until the chicken starts to develop some color and the onion begins to soften. 3. Add 2 cups of uncooked orzo to the skillet. Stir everything together and allow the orzo to toast for about 1–2 minutes. Add an additional 1 tsp cowboy butter seasoning and 1–2 tbsp Dijon mustard, stirring until combined. 4. Once the orzo starts to toast, pour in 2 cups chicken bone broth and 1½ cups water (or 3½ cups chicken broth). Season the liquid with additional garlic powder, paprika, salt, and black pepper, using the same seasonings you used for your chicken. Stir everything together, scraping up any flavorful bits from the bottom of the skillet, and bring to a boil. 5. Once boiling, reduce the heat to medium-low and cover with a lid. Allow the orzo to cook for 12–15 minutes, stirring every few minutes to prevent it from sticking to the bottom of the skillet. If the liquid absorbs before the orzo is fully cooked, add another ½ cup of broth or water as needed. 6. Once the orzo is tender, stir in ½ cup half & half and ⅔ cup freshly shredded Parmesan cheese. Mix until everything is creamy and well combined. 7. Turn off the heat, cover with a lid, and allow everything to sit for about 10 minutes. This helps the sauce thicken and gives the orzo time to absorb the remaining liquid. 8. Garnish with fresh parsley, additional Parmesan cheese, and an extra sprinkle of cowboy butter seasoning. #EasyRecipes #quickrecipes #onepotmeal #DinnerIdeas #easydinner
