Has a lot to do with the genetic predisposition to produce alcohol dehydrogenase. It’s an enzyme that breaks down alcohol before it’s fully absorbed. Evolutionarily, Asian cultures boiled their drinking water (tea), western cultures got their hydration through fermented beverages.
