The space is full of character, with soaring ceilings, exposed brick, beautiful tilework, and an open bakery that makes the whole place feel like a little slice of Paris in LA. ✨ During the day, République serves as a bakery, café, and brunch spot, offering everything from freshly baked pastries and breads to savory breakfast and lunch dishes. We stopped by for brunch and got to try a few of their favorites—and between the food, pastries, and gorgeous atmosphere, it’s easy to see why this spot has become such an LA staple. 🥐🍳☕️ MUNCH: 🥑 Avocado Toast – cucumber, pickled Fresno chilies, yuzu, cherry tomatoes, radish, roasted gold sesame 🍅 Heirloom Tomato Salad – watermelon, Gioia stracciatella, basil, cherry wood-aged balsamic 🥐 Crème Brûlée Bombolini – custard-filled pastry with a brûléed coating on the outside 💡 MEEKLY TIP: • République can get busy during brunch, so I’d recommend going earlier if you want to avoid a longer wait.
