Cowboy Jambalaya Ingredients Cowboy Cajun Spice Mix 1 teaspoon paprika  ½ tablespoon Kent’s Mesquite Smoke seasoning, or your favorite all-purpose blend 2 teaspoons dried Mexican oregano 1/4 teaspoon dried thyme 1/2 teaspoon garlic powder 1/2 teaspoon onion powder Jambalaya 2 tablespoons avocado oil 1, 14-ounce package smoked sausage, sliced 3 boneless and skinless chicken thighs, cut into bite-sized pieces 1 lb. raw rock shrimp, deveined and tails removed 2 tablespoon butter 2 stalks celery, chopped 1 yellow onion, chopped 1 green bell pepper, chopped 1 red bell pepper, chopped 1 yellow bell pepper, chopped 1 jalapeno, stemmed, seeded and diced 2 serrano pepper, stemmed, seeded and diced Salt and pepper, to taste 1, 28-ounce can crushed tomatoes Rice for serving Directions In a small bowl, combine all the spices in the seasoning mix and set aside. In a large cast iron skillet or wok, heat the avocado oil over medium heat. Add the sausage and cook until slightly browned, stirring occasionally. Strain the sausage from the skillet, place on a large plate and set aside. Add a little more avocado oil, if needed, and add the chicken to a medium bowl and toss with the seasoning mix until coated well. Add the chicken to the skillet and cook for about 4 minutes, or until cooked through (160 degrees F.). Strain from the skillet and place with the sausage. Add the shrimp to the skillet and cook about 2 to 3 minutes, just until the shrimp begin to turn opaque and set aside with the sausage and chicken. Melt the butter with the remaining oil in the skillet and stir in the vegetables. Cook for about 5 minutes, or until tender, stirring occasionally. To the skillet, combine the vegetables, sausage, chicken, shrimp and crushed tomatoes. Bring to a simmer and continue cooking about 5 minutes, stirring occasionally. Spoon over rice and serve hot. Optional serving method: You can also stir in 6 to 8 cups cooked rice (from 2 to 3 cups raw) into the dish and serve instead of on top of the rice.
