Loaded Shrimp Taco Bowl 🦐🌮🌿 If you're looking for a quick, easy & healthy dinner that doesn't sacrifice flavor, you've gotta give this one a try! It's made with simple ingredients, comes together in under 30 minutes & is perfect for busy weeknights or meal prepping! FULL RECIPE ⬇️ INGREDIENTS (2-3 servings) - 1 lb XL peeled & deveined raw shrimp of choice (I used wild caught Argentinian red shrimp) - 2 tbsp of extra virgin olive oil - Taco seasoning of choice - Jasmine rice (cooked) Roasted Corn & Black Bean Salsa: (Combine all ingredients) - 1 cup roasted yellow corn (cooled) - 1 cup canned black beans (strained and rinsed) - 1/2 cup finely diced red onion - 1/2 cup finely diced poblano pepper - 1/2 cup finely diced tomatoes - 1/2 cup fresh chopped cilantro - Juice of 1 lime - Salt & garlic powder to taste Creamy Cilantro Lime Sauce: (Blend all ingredients together) - ~1 cup light sour cream - ~1 tbsp extra virgin olive oil - Zest of 1/2 a lime - Juice of 1/2 lime - 2 cloves of galric - 1/2 bunch of cilantro - Salt to taste Note(s): Measurements are estimated; adjust ingredients to your personal preference. DIRECTIONS 1. Prepare the roasted corn and black bean salsa. Remove the corn from the cob and roast in a skillet over high heat for 3–5 minutes, stirring frequently to prevent burning. Transfer to a bowl and let cool while you prep the remaining ingredients. Combine everything and refrigerate until ready to serve. 2. Prepare the creamy cilantro lime sauce and refrigerate until ready to serve. 3. Make sure the shrimp are cleaned and peeled, then add to a large bowl with olive oil and taco seasoning. Mix until well combined. 4. Heat a large greased skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, or until cooked through. Be careful not to overcook! 5. Assemble your bowls & ENJOY! 🙌🏻 • • • • • #explore #cooking #food #healthy #fyp
