these spooky cheesecake crinkle cookies might be exactly what my halloween baking needed 🤭💚💜 Easy cheesecake crinkle cookies recipe: Makes 8 cookies Purple Cheesecake Filling * 4 oz cream cheese, softened * 2 tbsp butter, softened * ½ cup powdered sugar * 1 tsp vanilla * Purple gel food coloring Green Cookie Dough * ½ cup butter, softened * ¾ cup brown sugar * ¼ cup granulated sugar * 1 egg * 1 egg yolk * 2 tsp vanilla * Green gel food coloring * 2 cups all-purpose flour * 1 tsp baking soda * ½ tsp salt * ½ cup mini chocolate chips * ½ cup chopped chocolate For Rolling * ½ cup black cocoa powder Directions 1. Make the filling: Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Mix in purple food coloring. 2. Freeze: Scoop the filling into 8 large portions on parchment paper. Freeze for at least 2 hours, until completely firm. 3. Make the dough: Cream the butter, brown sugar, and white sugar until creamy. Mix in the egg, vanilla, and green food coloring. 4. Add dry ingredients: Mix in flour, baking soda, and salt until just combined. Fold in chocolate chips and chopped chocolate. 5. Chill: Refrigerate the dough for 30–45 minutes. 6. Stuff: Scoop about 4 tbsp dough. Flatten slightly, place a frozen cheesecake center in the middle, and completely cover it with dough. Roll into a ball. 7. Roll each cookie generously in black cocoa powder. 8. Freeze the assembled cookies for 15–20 minutes. 9. Bake at 350°F for 11–13 minutes. Do not flatten them. 10.
