Roasted veggie & meat lasagna:  For the sauce: - 1 lb ground beef  - 1 lb ground Italian sausage  - 1 tbsp tomato paste - 1 24oz jar marinara + 1/2 cup water - 1 medium onion - 4 garlic cloves - 2 celery stalks  - 2 carrots  - 2 tbsp Italian seasoning  - 1 tbsp salt, add more to taste  - 2 tsp black pepper - 1 bunch fresh parsley chopped  For the layers  - 1 eggplant, sliced and roasted - 1 zucchini, sliced and roasted  - 1 box lasagna sheets  - 6 oz shredded mozzarella  For the bechamel sauce  - 2 tbsp flour - 2 tbsp butter - 2 cups whole milk - 1 tsp nutmeg  - 1/4 cup grated Parmesan  - 1/3 cup heavy cream (added in the end to loosen sauce up again)  Steps:  1. Wash and prep all veg. Preheat oven to 425. In a food processor, chop onion, celery, carrot and garlic and set aside. On a baking sheet, season sliced eggplant and zucchini with olive oil, salt, pepper and Italian seasoning. Roast for 25min. Boil lasagna sheets as instructed on box and set aside.  2. Add onion mixture into a pot and cook on medium high until golden brown and remove from pot. Add in beef and ground sausage and brown for a few min then break up. Add cooked onion mixture back in and mix. Add tomato paste, salt, pepper, Italian seasoning, marinara and water.  3. Make your bechemal sauce by melting butter on medium low heat and mixing flour in to make a roux, cook for 2 min. Slowly mix your milk in and cook on medium for a few min until your sauce thickens. Make sure you’re stirring the sauce frequently. After 10 min, mix in a pinch of salt, pepper and nutmeg. Stir in Parmesan. Set aside off heat. Mine thickened a bit after I set it aside, I loosened it with some heavy cream, you can use milk too.  4. In a deep baking dish, assemble lasagna in layers of meat sauce, pasta sheets, bechemal sauce, veggie, and repeat until last layer is only meat sauce and bechemal. Top with grated mozzarella. Bake covered for 20 min, then broil on high for a few minutes until golden and bubbly. Cool for 20 min, then enjoy!  #fyp #foryoupage #food #fall #farm
