Dark Chocolate Malt Snack Cake Ingredients For the cake: 1 cup (130 g) all-purpose flour ½ cup (45 g) unsweetened cocoa powder ¼ cup (30 g) malted milk powder 1 tsp baking powder ½ tsp baking soda ½ tsp salt ½ cup (100 g) granulated sugar ½ cup (100 g) brown sugar, packed ½ cup (120 ml) vegetable oil (or melted butter) 2 large eggs (room temperature) 1 tsp vanilla extract ¾ cup (180 ml) buttermilk (or milk + 1 tsp vinegar/lemon juice) ½ cup (120 ml) hot coffee (or hot water, for extra moisture) For the malted chocolate glaze (optional but amazing): ½ cup (120 ml) heavy cream 100 g dark chocolate, finely chopped 2 tbsp (15 g) malted milk powder Pinch of salt Instructions 1. Prepare the oven & pan Preheat oven to 350°F (175°C). Grease and line an 8-inch (20 cm) square or round cake pan with parchment. 2. Mix the dry ingredients In a medium bowl, whisk together flour, cocoa powder, malted milk powder, baking powder, baking soda, and salt. 3. Mix the wet ingredients In a large bowl, whisk sugars, oil, eggs, and vanilla until smooth. Stir in the buttermilk. 4. Combine & finish batter Add the dry mixture into the wet, mixing gently until just combined. Slowly pour in the hot coffee (or water) and whisk until smooth. The batter will be thin. 5. Bake Pour into the prepared pan. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool in the pan for 10 minutes, then transfer to a rack. 6. Make the glaze Heat cream until just simmering. Pour over chopped dark chocolate, add malted milk powder and salt, then whisk until glossy and smooth. 7. Glaze the cake Spread glaze over cooled cake. Let set for at least 30 minutes before slicing.
