@siemprehomemade: I have combined the best of both worlds and bring you my Tinga Chicken Pot Pie. Chicken Tinga is by far my favorite food. It brings me so much comfort and it reminds me of home so now that it is fall what better way to make a comfort meal even cozier than by combining my two cultures and turning it into a classic chicken pot pie. Here’s my recipe: Ingredients: -3-4 small chicken breasts -1 onion, sliced -1 cup chopped carrots -1/2 cup corn -1/2 cup frozen sweet peas -2 bay leaves -1 tbsp red wine vinegar -1 tbsp honey -1/3 cup flour -salt and pepper to taste For the sauce -2 medium tomatoes -3 chipotle peppers in adobo sauce (more or less depending on spice tolerance) -1/4 onion -2 garlic cloves -1 tsp pepper -1 tsp cumin -1/2 tsp cloves -3 whole allspice or 1/4 tsp ground -2 cup chicken broth -1 tbsp chicken bouillon (optional) -salt to taste Instructions: 1. Season both side of the chicken and add to a hot pan with a tbs of oil. Sear on both sides until cooked thru. Remove, shred and set aside 2. To the same pan, add onions tsp oil and sauté for 5-10 minutes until lightly brown. 3. Add the shredded chicken and carrots and sauté for another 5 minutes. 4. To a blender add two roma tomatoes, 1/4 onion, two garlic cloves, cumin, allspice, cloves, chipotle peppers, broth, chicken bouillon if using and blend until smooth. 5. Add the sauce to the chicken along with two bay leaves and simmer for 10 minutes. 6. Mix 1/3 cup of flour with 1.5 cups water and add the liquid to the chicken filling along with 1 tbsp red wine vinegar and 1 tbsp honey. 7. Stir to combined and simmer until thickened. 8. Take the filling off the heat and allow to cool 9. Cut the puff pastry into 16-24 equal size squares and set aside. 10. Transfer the filling to a pie dish and top with puff pastry squares slightly overlapping. 11. Brush the top of the pastry with egg wash and bake at 400 degrees F for 25-30 minutes until top is golden brown and crisp. 12. Let it rest for 10 minutes.
