@cookingmadesimple31: 🍤 Caribbean Curry Coconut Shrimp Ingredients For the Shrimp: * 1 lb large shrimp, peeled & deveined, tails on or off * 1 tbsp olive oil * 1 tsp Cajun seasoning * 1/2 tsp salt * 1/2 tsp black pepper For the Curry Sauce: * 1 tbsp butter or oil * 3 cloves garlic, minced * 1 small onion, diced * 1 tbsp yellow curry powder * 1 can (14 oz) coconut milk * 1/2 cup chicken broth * 1 tbsp tomato paste * 1 tsp brown sugar (or honey) * 1/2 tsp paprika * 1/2 tsp salt * 1/4 tsp black pepper * 1/2 tsp red pepper flakes (optional) For the Veggies: * 1 red bell pepper, sliced * 1 green bell pepper, sliced * 1/2 cup pineapple chunks, fresh or canned To Serve: * Cooked white rice (or rice of your choice) * Fresh cilantro, chopped * Lime wedges Steps 1. Season the shrimp In a bowl, toss shrimp with Cajun seasoning, salt, pepper and a little olive oil. Let sit for 10–15 minutes while you prep the rest. 2. Cook the shrimp In a large skillet, heat 1 tbsp oil over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and cooked through. Remove and set aside. 3. Make the curry sauce In the same skillet, melt butter or oil. Add garlic and onion; cook until fragrant, about 2–3 minutes. Stir in curry powder, tomato paste, brown sugar, paprika, salt, black pepper and red pepper flakes. Cook for 1 minute. 4. Add coconut milk & veggies Pour in coconut milk and chicken broth. Stir well. Add bell peppers and simmer for 8–10 minutes, until the sauce thickens and the veggies are tender. 5. Combine Add the cooked shrimp and pineapple chunks back into the skillet. Stir and let simmer for 3–5 minutes so the flavors come together. 6. Serve Serve over rice and top with fresh cilantro and a squeeze of lime.
