Recipe: 🇲🇽 Mexican Rice (Arroz Rojo) Serves 4–6 Ingredients: Rice • 2 cups long-grain white rice (I used jasmine) • 3 tbsp neutral oil (vegetable, avocado, or canola) Tomato Base (Blended) • 3 Roma tomatoes ( super red, very ripe preferably for color) • 1/2 small white onion • 2 -3 garlic cloves • 2 cups water  • 1 tbsp chicken bouillon • 1 tbsp tomato bouillon • 1/4 tsp cumin (optional) *For a stronger flavor, you can increase the chicken and tomato bouillon to 1 1/2-2 tbsp each, depending on your taste and the brand used.  Add-Ins: • 1 whole jalapeño pepper • 1 sprig cilantro  Step 1: Blend the Tomato Mixture Blend until completely smooth: • Roma tomatoes • Onion • Garlic • 2 cups of water • Chicken bouillon • Tomato bouillon • Cumin (if using) Set aside. Step 2: Rinse the Rice Rinse the rice under cold water until the water runs mostly clear. Drain very well. This helps keep the rice fluffy and prevents it from becoming sticky. *Pat dry with a paper towel if needed (to get rid of excess water)  Step 3: Toast the Rice Heat the oil in a large skillet or heavy pot over medium heat.
