No Roux Mac & Cheese 🧀 • 1 stick of butter • 1 quart half-and-half • 16 oz Velveeta, cubed • 16 oz Colby Jack cheese • 8 oz sharp cheddar cheese • 8 oz Gouda cheese • 1/2 cup cold whole milk • 1/2 tsp seasoned salt • 1/2 tbsp garlic powder • 1/2 tbsp onion powder • 1/2 tbsp paprika • 1/2 tbsp freshly cracked black pepper • 1 1/2 lbs conchiglie, cooked 2 minutes under the package directions and drained • 1 cup panko, toasted on medium heat with 1 tbsp butter 1. Preheat the oven to 300 degrees, get a large pot of salted water boiling, shred all of your cheese, and toast your panko. 2. Melt the butter in a large pot over medium heat. Once melted, pour in the half-and-half. Reduce the heat to medium-low and stir frequently until the half-and-half is warmed through. Do not let it simmer or boil. 3. About halfway through adding the shredded cheese, stir in the 1/2 cup cold milk. The cold milk helps lower the temperature slightly, which keeps the cheese smooth and prevents it from becoming grainy. Continue adding in the remaining cheese. 6. Once all of the cheese has melted, turn off the heat. Stir in the garlic powder, onion powder, seasoned salt, paprika, and black pepper. Taste the cheese sauce and add more salt if needed (you most likely won’t need it, remember your pasta is a tad salty from the pasta water). 7. Add the cooked pasta to the cheese sauce and stir until every noodle is evenly coated. 8. Transfer the mac and cheese to a 9x13 baking dish. Layer mac and cheese, then half of the reserved shredded cheese, more mac, more cheese, then top it with the toasted panko. 9. Bake uncovered for 15-20 minutes.
