These delicious Baked Chicken Bites are made with real ingredients, packed with protein and sneakily loaded with hidden veggies, so your little ones get the nutrition they need, without the fuss. Whether it’s a last-minute dinner, a lunchbox hero, or a quick snack after school, these bite-sized favourites are: ✔️Ready in minutes ✔️Perfectly portioned for little hands ✔️Free from artificial flavours and preservatives Ingredients: -300g chicken breast -1 small potato -1/2 onion -1/2 teaspoon salt -pepper -1/2 teaspoon garlic powder -1 carrot, grated For the breading: -60-70g panko breadcrumbs -a pinch of salt For the sauce: -1 tablespoons chilli sauce -2 tablespoons honey Instructions: 1. Preheat your oven to 220°C/428°F. 2. Place the chicken breast, potato, onion, salt, pepper and garlic powder in a food processor and blend until all is minced. When ready, add the carrot and mix well. 3. Combine the breading mix (I like to toast the breadcrumbs for 4-5 minutes in the oven) to get that golden colour. 4. Shape the chicken mixture in your hand into balls and toss into the breadcrumbs to completely coat. 5. Line a baking tray with parchment paper. Brush generously with olive oil and arrange the balls. You can also spray some oil on top. 6. Bake for 12-15 minutes, turn over, then cook another 7-8 minutes or until cooked through. 7. Serve with honey chilli sauce or their favourite one. Enjoy! #chicken #bites #kidfriendly #homecooking #EasyRecipes #easymeals #lunchboxideas
