Frozen Caramel-Toffee Ice Cream Sandwich Cake Serves 12–16 Ingredients * 24 rectangular vanilla ice cream sandwiches * 16 oz frozen whipped topping, thawed * 1 cup thick caramel sauce, divided * 1 cup hot fudge sauce, divided * 1½ cups chopped chocolate-covered toffee bars or Heath bits, divided * Pinch of flaky sea salt, optional Instructions 1. Line a 9 x 13-inch baking dish with parchment paper, leaving enough overhang to help lift the dessert out later. 2. Arrange 12 ice cream sandwiches in a single layer, trimming a few as needed to cover the bottom. 3. Spread half of the whipped topping over the sandwiches. 4. Drizzle with about ⅓ cup each of caramel and hot fudge. Sprinkle with ½ cup of the chopped toffee. 5. Add another layer of 12 ice cream sandwiches. Spread the remaining whipped topping evenly over the top. 6. Drizzle with another ⅓ cup each of caramel and hot fudge, then sprinkle with the remaining toffee pieces. 7. Cover and freeze for at least 4 hours, preferably overnight. 8. Let the dessert sit at room temperature for 5–10 minutes before slicing. Add the remaining caramel and fudge just before serving so the drizzles stay glossy. Finish with a tiny pinch of flaky salt if desired.
