Each year, 120,000,000,000 pounds of food are wasted. Almost 40% of fruits and vegetables are discarded rather than being used to feed us. Food waste comes in many different forms, and some of it, like insects and animal consumption, frost, drought, and other natural causes, is often beyond our control. However, there are many things we can do at home to help reduce food waste. One of them, though it may seem subtle, is the way we cut and prepare our ingredients. Often, I see people removing the stem from their strawberries, the core from their apples, and the meat from their pineapples in a way that ends up creating unnecessary waste of delicious and nutrient-filled food. The examples above are small and simple, but daily efforts of being more responsible with our food prep can lead to more value from the ingredients we buy at the store and less waste. In fact, the small parts of food that are inedible, I actually give to our chickens, who then get nutrients from food that we struggle to digest and then make us delicious eggs. This, in a full-circle way, gives us even more amazing nutrients.
