Apple Cider Recipe: Ingredients: 8 medium apples, quartered, 1 orange sliced, 3 cinnamon sticks, 1 teaspoon whole cloves, 1/2 teaspoon ground nutmeg, 1/4 teaspoon allspice, 1/3 to 1/2 cup brown sugar or maple syrup, 8 cups water, and a few thin apple slices for serving. Instructions: Place the apples, orange slices, cinnamon sticks, cloves, nutmeg, and allspice in a large pot. Pour in the water until the fruit is mostly covered. Bring to a boil, then reduce the heat and simmer gently for about 1 1/2 to 2 hours until the apples are very soft. Mash the fruit with a potato masher or large spoon, then continue simmering for another 20 to 30 minutes. Strain the mixture through a fine-mesh strainer or cheesecloth, pressing the fruit gently to extract as much liquid as possible. Return the cider to the pot, stir in the brown sugar or maple syrup to taste, and warm gently for several minutes. Serve hot with cinnamon sticks and fresh apple slices, or chill completely and serve cold over ice.
