so cozy and SO EASY 🍂☺️ RECIPE BELOW • Approximately a 4lb whole chicken, spatchcock (meaning flat/or butterflied) • 1 lemon, cut lengthwise and sliced into 12 slices • 1 small sweet onion, cut into half and sliced  • 3 cloves of garlic, minced • 6-8 Yukon gold potatoes, quartered  • Olive oil  • 1 tablespoon of kosher salt • Fresh cracked pepper  • Spices I used but feel free to use whatever your family enjoys: 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon dried parsley • 3 sprigs of fresh thyme and 3 springs of fresh rosemary • 1/2 cup dry Chardonnay wine  Preheat oven to 450 degrees. Dry out both the underside and the top of your spatchcock chicken with paper towels.  In a large cast iron skillet, layer the following ingredients: lemon slices, onion slices, and then lastly the garlic. Place chicken underside up on top. Drizzle with about 1/2 teaspoon of olive oil and then generously season with half of your salt, pepper and spices. Flip. Nestle your quartered potatoes around the sides of the chicken. Drizzle both the potatoes and the chicken with about 1 1/2 tablespoons of olive oil. Brush the olive oil over the entire surface of the chicken to ensure the seasonings stick well to the skin. Generously season the chicken and all the potatoes with the remainder of your salt, pepper and spices. Be generous! Nestle your springs of rosemary and thyme around your chicken and place the entire skillet in the oven to roast for one hour.  After an hour, remove the chicken and pour your 1/2 cup of wine around the chicken and on top of the potatoes. Not on the chicken! Return the chicken to the oven for about 30 more minutes or until the internal temperature of the chicken is 165 degrees. Remove from the oven and cover with foil for 10 minutes to rest and allow the juices of the chicken to settle.  Carve chicken and serve with your potatoes. We always serve this dinner with a side salad because it is a veggie side I can prep earlier in the day for the ultimate low-fuss weeknight meal.
