Welcome back for the 3rd episode in my How to Cook a Steak Series! Todays star… the butter basted steak!  This steak method is an evolution of my last post, and it’s honestly one of my favorites! Because you have the ability to use any combination of your favorite aromatics and great butter, it leads to an always amazing, never boring steak!  Tips for this method! • Keep the season simple with just salt or Salt and pepper! I used a Rosemary salt! • High heat in a pan that can handle it such as @lodgecastiron , @hexclad , or @dalstrong which are my go tos! • Hot and fast sear, the goal is to build a crust, but not fully cook the steak!  The steak should be around 90F- 100F when you pull it out.  • Adjust cook time based on the steak.  It’s never going to be the same, and for thicker steaks you will need to bump the time up! Always cook to your desired internal temp and not a specific time! • Use good quality butter! I always go for @kerrygoldusa …. Because it really is the best I’ve had! And typically you just add it to the juices from the steak, but I used those to make a pan sauce while the steak rested this time!  • The aromatics you use are entirely up to you! I always always use Garlic along side an herb like thyme or rosemary.  Feel free to use tarragon, shallots, citrus peel, or anything you enjoy!! • The time spent butter basting varies just like the initial cooktime. 30-60 seconds usually does the trick. Just check the temp and pull the steak when it’s 4-7 degrees under your preferred doneness.  • Let it rest!!!!!!! Don’t ruin your hard work by skipping this step!
