Slow-Cooked Pot Roast with Mashed Potatoes & Gravy A comforting pot roast that slow cooks to perfection, resulting in tender beef and savory vegetables, all topped with rich, flavorful gravy. Paired with creamy mashed potatoes, this dish is the ultimate warm hug for your dinner table. 🍽️ 🥩 Main Ingredients - 3-4 lbs beef chuck roast - 4 carrots, chopped - 2 onions, quartered - 4-5 potatoes, peeled and quartered - 2 cups beef broth - 1 cup water - 1 packet onion soup mix - Salt and pepper to taste 🧄 Mashed Potatoes - Butter for mashed potatoes - Milk for mashed potatoes 👩‍🍳 Directions ➡️ Season the beef chuck roast with salt and pepper and place it in the slow cooker. ➡️ Add chopped carrots, onions, and potatoes around the roast, creating a cozy nest of veggies. ➡️ In a bowl, mix together the beef broth, water, and onion soup mix until combined. ➡️ Pour this flavorful mixture over the ingredients in the slow cooker, ensuring everything is well coated. ➡️ Cover the slow cooker and cook on low for 8 hours or until the beef is tender and shreds easily with a fork. ➡️ Meanwhile, for the mashed potatoes, boil the peeled potatoes in salted water until tender, then drain. ➡️ Mash the potatoes with butter and milk until they reach that creamy perfection you desire. ➡️ Once the pot roast is ready, serve the shredded beef with the vegetables, spooning rich gravy over it. ➡️ Plate this hearty meal alongside your fluffy mashed potatoes and enjoy every delightful bite!
