Lasagna Soup 🍅🧀 All those favorite lasagna flavors in one cozy bowl—and ready in about 40 minutes. It tastes like you spent hours making and baking a lasagna, with a whole lot less work. Such a good fall and winter dinner. The creamy tomato broth, beef and sausage, tender noodles, and herbed ricotta on top? Everything you want from lasagna, just grab a spoon. And you know I love getting another meal out of the work I’m already doing. I set aside half the soup base before adding the cream, cheese, and noodles, then vacuum-sealed it for the freezer. In a few weeks, I can pull it out, reheat it, and finish the soup in no time. That’s a win in my kitchen. Recipe below! 🤎 Lasagna Soup Ingredients For the soup 1 pound ground beef 1 pound ground pork sausage 1 large onion, diced 6 cloves garlic, minced 1 can tomato paste 2 tablespoons Italian seasoning mix (garlic powder, onion powder, Italian seasoning, red pepper flakes, oregano, basil, and black pepper) 6 cups beef bone broth, plus more as needed 1 (28-ounce) can crushed tomatoes 1 jar tomato sauce 8 ounces lasagna noodles, broken into pieces 1 cup heavy cream Fresh basil and parsley, chopped Half of the ricotta mixture below Salt and black pepper, to taste For the ricotta mixture 1 cup ricotta ½ cup freshly shredded mozzarella ¼ cup freshly grated Parmesan 2 tablespoons chopped fresh basil and parsley Salt and black pepper, to taste Instructions Brown the meat. In a large pot over medium-high heat, cook the ground beef and sausage, breaking them into crumbles. Transfer to a bowl. Leave a little rendered fat in the pot and drain the rest. Cook the onion. Add the diced onion and cook until softened. Stir in the tomato paste and minced garlic. Cook, stirring, for 1–2 minutes. Build the soup base. Return the meat to the pot and stir in the Italian seasoning mix. Pour in the beef bone broth, scraping up the browned bits from the bottom. Add the crushed tomatoes and tomato sauce. Bring to a simmer, then taste and adjust the seasoning. Make the ricotta mixture. In a bowl, combine the ricotta, mozzarella, Parmesan, basil, parsley, salt, and pepper. Set aside. Cook the noodles. Add the broken lasagna noodles to the simmering soup. Cover and cook, stirring occasionally to prevent sticking, until the noodles are tender. Add more broth as needed for your preferred consistency. Finish the soup. Reduce the heat to low. Stir in the heavy cream, half of the ricotta mixture, and fresh basil and parsley. Stir until the cheeses melt and everything is combined. Taste and adjust the seasoning. Serve. Ladle into bowls and top each serving with a dollop of the remaining ricotta mixture and more fresh basil and parsley.
