Heat a large cast-iron skillet or grill over medium-high heat. Add the olive oil and 2 tablespoons butter if using a skillet. Sear the steaks for approximately 4–5 minutes per side, adjusting for thickness and desired doneness. Use a meat thermometer to check the internal temperature. Transfer the steaks to a plate and allow them to rest while preparing the shrimp and sauce. In the same skillet, melt 2 tablespoons of the unsalted butter over medium heat. Add the shrimp and season lightly with salt and pepper. Cook for approximately 1–2 minutes per side, until pink, opaque, and cooked through. Transfer the shrimp to a bowl and set aside. Add the remaining tablespoon of butter and minced garlic to the skillet. Sauté for about 1 minute, until fragrant.
