Recipe: Toasted Almond Horchata🔥 🇲🇽 Serves 4 Ingredients: For the Horchata Base * 1 cup uncooked white rice * 1/2 cup raw, unsalted almonds (omit if allergic)  * 3 cinnamon sticks * 1 whole star anise * 4- 6 cups water For the Creamy Horchata * 1 cup whole milk * 1/2 can (about 6 oz) evaporated milk * 1/3 cup sweetened condensed milk * 1/4 cup granulated sugar, or to taste * 1 tsp vanilla extract * Pinch of salt (optional)  *adjust the sugar to your sweetness level preference  For Serving * Ice * Ground cinnamon (sprinkled on top)  * Cinnamon stick (optional) 1. Wash & Dry the Rice Place the rice in a fine-mesh strainer and rinse under cold water 1-2 times Drain very well, then pat dry to get any excess water. 2. Toast the Rice & Almonds Add the dried rice and 1/2 cup almonds to a large dry skillet over medium-low heat. Toast for about 5–7 minutes, stirring frequently, until the rice is lightly golden and everything smells toasted and nutty. During the last 30 seconds, add: * 3 cinnamon sticks * 1 whole star anise Stir constantly just until the spices become fragrant. Be careful not to burn the rice, almonds, or spices. 3. Soak Transfer the toasted rice, almonds, cinnamon sticks, and star anise to a large bowl or container. Pour in 4 cups of water. Allow the mixture to cool, then cover and refrigerate for at least 4 hours, preferably overnight. 4. Blend After soaking, remove and discard the star anise. Add the soaked rice, almonds, cinnamon sticks, and all of the soaking water to a blender. Blend on high for 1–2 minutes, or until the rice and almonds are broken down as finely as possible. 5. Strain Pour the mixture through a cheesecloth, or very fine-mesh strainer. For an extra-smooth horchata, strain it twice. Discard the remaining rice and almond pulp. 6. To the strained horchata base, add: * 1 cup whole milk * 1/2 can (about 6 oz) evaporated milk * 1/3 cup sweetened condensed milk * 1/2 cup granulated sugar * 1 tsp vanilla extract * Pinch of salt * 1-2 cup of water (if it’s too thick)  Mixed together Whisk well or blend briefly until everything is completely combined. Taste and adjust the sweetness if needed. For a sweeter horchata, add additional sugar or condensed milk 1 tablespoon at a time. 7. Chill Cover and refrigerate for at least 1–2 hours before serving. The toasted almond, cinnamon, and star-anise flavors will develop even more as it chills. 8. Serve Stir the horchata well before serving, as some natural settling is normal.
