I cook a big pot of something twice a week. that's all the cooking I do. I don't mind eating the same thing for a few days. then I just freeze whatever's leftover in individual containers for future use.

You can make your regular casseroles, just portion them out into individual servings and freeze them. Then just microwave to reward.
