Prepare fresh shrimp, pumpkin, sweet potato, eggplant, mushrooms, and green beans, cutting the vegetables into thin pieces. Pat all ingredients dry. For the batter, lightly combine ice-cold water, egg, and flour, leaving a few lumps to keep the coating delicate. Heat vegetable oil to approximately 350°F (175°C). Lightly dust the ingredients with flour, dip them into the cold batter, and immediately fry in small batches. Cook until the coating becomes pale golden, airy, and crisp without becoming heavy. Drain the tempura on a wire rack or paper towels. Prepare a dipping sauce using dashi, soy sauce, and mirin. Serve immediately with grated daikon, fresh lemon, and steamed rice for an authentic Japanese-style meal.
