Chargrilled courgettes & whipped chive tofu dip, dinner party spread for £2 a head! ✨ @Tesco - AD  I know you all love a big Tesco shop as much as me and I’m giving you permission to deviate from your shopping list to go and check out their Go Cook range 🏃🏼‍♀️  Ingredients (serves 4)  For the courgettes   2 courgettes, cut into chunky slices   3 cloves garlic  1 tbsp olive oil  For the whipped tofu   1 block silken tofu  1/4 block smoked tofu  1 tbsp nutritional yeast   Juice of 1 lemon  Handful chopped chives   1 head garlic, roasted  For the flatbreads   300g self raising flour  210g vegan yoghurt  1 tsp instant yeast sachet  50ml warm water  1 tsp olive oil  1 tsp salt  To serve   Simple side salad   Pickled onions/radishes   Chilli oil   1.	For the flatbreads, combine the yeast and hot water and set aside until bubbly.   2.	Add the flour and salt into a bowl and mix. When bubbly add the yeast mixture, yoghurt and olive oil. Mix together with your hands and knead on a floured surface for 5 minutes until you form a smooth and elastic dough. Place into an oiled bowl and cover with a wet tea towel, leave somewhere warm to rise for 30 minutes.   3.	For the courgettes, heat your Go Cook pan on medium/high heat with a little olive oil and add the sliced courgettes in. Season well and cook for around 10 minutes until lightly charred, season well and add in garlic using the Go Cook garlic crusher in the last 2 minutes of cooking.   4.	For the whipped tofu, simply add all of the ingredients into a food processor along with a generous pinch of salt and pepper and blitz until smooth. Taste for seasoning.   5.	Place the cooked courgettes aside and wipe out the pan. Keep on a medium heat.  6.	Split the flatbread dough into 4 and roll each piece into a ball and then roll out flat.   7.	Add the flattened dough into the pan and cook for around 1.5 minutes on each side until brown and fluffy. Repeat with all of the dough.   8.	To serve, add the whipped tofu onto a plate followed by the courgettes. Layer over chilli oil and pickled onions or radishes. Serve with the warm flatbreads and a simple side salad.
