Replying to @manuway23 Carrot Cupcakes with Cream Cheese Frosting | 2010’s RnB: Episode 4 I don’t know whether I prefer carrot cupcakes or a 2-layer carrot cake 🤔 Song: Frank Ocean - Pink + White Ingredients 1 large (2-3 medium) carrots 50g walnuts  1/2 cup (100g) granulated sugar 1/2 cup (100g) brown sugar 2 medium eggs 120ml vegetable oil (or other neutral oil) 1 tablespoons vanilla extract  1 cup (125g) plain flour  3/4 tsp baking powder 3/4 tsp baking soda A pinch of salt (optional) 1/2 tbsp cinnamon 1/2 tsp ginger  1/4 tsp nutmeg  A splash of milk (optional but recommended) 200ml double cream  140g cream cheese  30g icing (confectioner’s) sugar (taste and add more if needed) Recipe 1. Roughly chop the walnuts and add to a pan (while cold) then toast on a medium heat for a few minutes  2. Add the granulated sugar and brown sugar to a bowl 3. One by one, crack the eggs in the bowl and whisk thoroughly after adding each one until well combined 4. Pour in the vegetable oil and mix 5. Add in the vanilla extract and whisk until combined 6. Wash and peel then grate the carrots 7. Introduce the grated carrots and again whisk thoroughly 8. Add the dry ingredients to the mixture and whisk gently just until the flour etc is incorporated 9. Pour in a little milk and combine 10. Add the toasted walnuts and begin folding gently  11. Preheat the oven for 5 minutes to 175 degrees 12. Pour equal amounts of the mixture into each cupcake tray 13. Place in the oven for 22-25 minutes (check it at 22 minutes to see if a toothpick comes out clean) 14. While the cake is cooking, add double cream to a bowl and begin whisking until it becomes thick and stiff peaks start to form 15. Then add the cream cheese and fold gently 16. Shift the icing sugar into the bowl and fold again, gently. 17. Cover with cling film and leave to rest in the fridge until the cake has come out of the oven and cooled 18. Once the cupcakes are cool (after 1 hour or so), pipe the frosting on top 19. Serve and enjoy! #carrotcupcakes #carrotcake #cupcakes #baking #dessert
