That tradition developed into Trabzon Dondurması, a regional ice cream made with cow’s milk, sugar and salep. Unlike conventional white ice cream, its traditional preparation produces a distinctive caramel-like color and flavor. On September 17, 2026, Trabzon Dondurması received official geographical-indication registration from the Turkish Patent and Trademark Office, recognizing its regional identity, ingredients and production methods. The protection does not require producers to return to mountain snow or historical equipment. Instead, it establishes standards to preserve the ice cream’s defining characteristics for future generations.
