@craftabrew: How do you make alcohol using yeast? You only need sugar, water, yeast and a little nutrient. This is the basic concept behind all fermented drinks: yeast "eat" sugar and produce alcohol and CO2 as a byproduct. A simple sugar wash (also called kilju) is sugar and water, fermented. You don’t always need malt, honey, or juice. Here's a basic recipe: - 1.5 lbs sugar, topped up with water to 1 gallon - Yeast nutrient (Fermaid O or DAP) - Wine or champagne yeast - A squeeze of lemon juice to lower pH Ferment in a carboy of vessel with an airlock to allow the CO2 to escape. Add an airlock so CO2 can escape. Once it’s done, stabilize (to prevent fermentation in bottles) and flavor it how you like. #homebrewing #fermentation #kilju
Yeast eats sugar, craps alcohol, farts carbon dioxide. Everything else is just flavouring.

No pectin in a sugar wash, means no methanol, so feel free to do that freeze concentration thing! OR use it as a jumping off point for adding things, like juniper and other herbs to make a gin-like thing, or go straight up Finnish punk rock-style with the fruit juice. And to make it taste cleaner, there is always a couple runs through a brita filter!
