Ingredients in English * 3 cups of natural pomegranate juice. * 4 cups of sugar. * 1 cup of cornstarch. * Less than 1/2 teaspoon of citric acid, added in two stages as described in the method. * Pistachios and mixed nuts to taste. Note: Use the same cup to measure all ingredients, regardless of its size طريقة التحضير 1. نضع في قدر على النار كاستين من عصير الرمان وكاستين من السكر، ونترك الخليط حتى يغلي ويذوب السكر. 2. بعد ما يغلي الخليط، نضيف أقل من ربع ملعقة صغيرة من ملح الليمون، ونتركه يغلي لمدة دقيقتين. 3. على جنب، نذوّب كاسة النشا بكاسة من عصير الرمان المتبقية، ونحرّك جيداً حتى يذوب النشا تماماً. 4. نضيف خليط النشا وعصير الرمان إلى القدر، مع التحريك المستمر حتى يتكاثف المزيج ويتجانس. 5. بعد ما يتكاثف الخليط، نتركه من دقيقتين إلى ثلاث دقائق إضافية مع التحريك، حتى تختفي نكهة النشا النيئة. 6. نبدأ بإضافة كاستَي السكر المتبقيتين على أربع مراحل، بمقدار نصف كاسة في كل مرة. نحرّك حتى يذوب السكر المضاف تماماً قبل إضافة نصف الكاسة التالية، ونكرر العملية حتى تنتهي كمية السكر. 7. بعد الانتهاء من إضافة السكر، ننتظر حوالي 7 دقائق، ثم نضيف المرحلة الثانية من ملح الليمون، بمقدار أقل من ربع ملعقة صغيرة. 8. نتابع التحريك على نار هادئة حتى تنضج الراحة ويصبح قوامها مناسباً: * الراحة السادة: حوالي 30 دقيقة. * راحة الرمان بالمكسرات: حوالي 35 دقيقة. 9. عند تحضير راحة المكسرات، نضيف الفستق الحلبي والمكسرات حسب الرغبة، ونواصل التحريك حتى تتوزع المكسرات جيداً ويصل الخليط إلى القوام المطلوب. 10. نسكب الراحة في القوالب المناسبة، ونتركها حتى تبرد وتتماسك تماماً، ثم نقطّعها ونقدّمها. صحتين وألف عافية على قلوبكم ❤️ ⸻ Method in English 1. Place 2 cups of pomegranate juice and 2 cups of sugar in a saucepan over the heat. Bring to a boil, allowing the sugar to dissolve. 2. Once boiling, add less than 1/4 teaspoon of citric acid and let the mixture boil for 2 minutes. 3. In a separate bowl, dissolve 1 cup of cornstarch in the remaining 1 cup of pomegranate juice, stirring until completely smooth. 4. Add the cornstarch and pomegranate juice mixture to the saucepan, stirring continuously until the mixture thickens and becomes uniform. 5. Once thickened, continue cooking and stirring for another 2–3 minutes to cook out the raw cornstarch taste. 6. Gradually add the remaining 2 cups of sugar in four stages, adding 1/2 cup at a time. Stir until each addition has completely dissolved before adding the next portion. 7. After all the sugar has been added, wait approximately 7 minutes, then add the second portion of citric acid, using less than 1/4 teaspoon. 8. Continue stirring over low heat until the Turkish delight is fully cooked and reaches the desired consistency: * Plain pomegranate delight: approximately 30 minutes. * Pomegranate delight with nuts: approximately 35 minutes. 9. For the nut version, add pistachios and mixed nuts to taste, stirring until evenly distributed and the mixture reaches the desired consistency. 10. Pour into suitable molds and allow to cool and set completely before cutting and serving. Enjoy your homemade pomegranate delight! ❤️.
