Calling all one-pot-wonder lovers. 🙋🏻‍♀️🙋🏻‍♀️   One pantry staple that I consistently turn to is rice. It’s versatile, nourishing, delicious and something my whole family loves.   And I’m thrilled to be partnering with my fave rice brand, @lundbergfarms!  Their rice is organic, Californian-grown, all by independent family farmers. 🍚💯   Here’s how to make this easy garlic butter shrimp and rice!   1 ¼ cup Lundberg organic jasmine rice, rinsed 4 tablespoons butter 1 tablespoon olive oil 2 teaspoons garlic paste or 3 cloves garlic, minced zest of 1 lemon 1 teaspoon Italian seasoning pinch of red pepper flakes 1lb shrimp (wild caught Argentinian shrimp is the best!) 1 teaspoon each salt and pepper 2 cups chicken broth 1 cup broccoli florets, cut small 1 cup frozen peas ¼ cup fresh parsley, finely chopped for topping: Parmesan cheese, cracked black pepper, squeeze of lemon   In a fine mesh sieve, rinse the rice until the water runs clear, set aside to fully drain.   In a large pot, add the butter and olive oil over medium heat. When the butter is melted and hot, add the garlic, lemon zest, Italian seasoning and red pepper flakes, sautéing until fragrant, 60-90 seconds.   Pat the shrimp dry with paper towels and season on both sides with salt and pepper. Add to the garlic butter and cook for 60 seconds per side (you may need to work in two batches to avoid overcrowding the shrimp). Remove the garlic butter shrimp to a bowl, leave one tablespoon butter/oil in the pot.   Add the rice to the remaining fat, tossing to get it coated. Let toast for a few minutes. Add the chicken broth, bring to a boil, then cover, turn the heat to low and let the rice simmer for 15 minutes.   Take off the lid and immediately add the broccoli and peas on top of the rice. Place the shrimp on top, drizzling the butter over everything. Return the lid and let it steam for another 5-10 minutes.   Add parsley and the juice of your zested lemon and use a large spoon to toss everything together. Finish with parmesan cheese and freshly cracked pepper!   Dinner is served, this one was a hit with my family!     #onepotwonder #lundbergpartner #easydinner #recipeideas
