you guys genuinely don’t even know the lengths i went to making this😂 (for the marble banana bread) you’ll need: - 10 dates - 1/4 cup (60ml) hot milk - 3 ripe bananas - 1/2 cup (120g) greek yogurt - 1/3 cup (80ml) maple syrup - 3 eggs - 1/2 cup (120g) melted butter, cooled - 1tsp vanilla extract - 2 cups (250g self-raising flour) - 2tsp baking powder - 2tbsp cocoa powder (to serve): - icing sugar - greek yogurt / crème fraiche - honey if you like the extra sweetness! method: 1. begin by placing the dates in a large bowl and pouring over the hot milk. 2. using a fork, begin roughly mashing the dates until you form a thick paste (it doesn’t need to be smooth!). 3. add in the bananas and mash these in until the dates and banana are roughly combined. 4. now add in the yogurt, maple syrup, eggs, melted butter, vanilla extract, flour and baking powder. 5. whisk until thoroughly combined and no lumps of flour remain. 6. pour 2/3 of the mixture into a lined 900g loaf tin. place to one side whilst we finish the rest. 7. add the cocoa to the remaining batter and whisk until thoroughly incorporated. 8. evenly spoon the chocolate batter on top of the batter in the tin. 9. run a fork in a swirling motion all the way through the cake batters, lifting the bottom slightly as you go (or you can use the end of a blunt butter knife). 10. be careful not to swirl the mixture too much as we still want some definition of colours! 11. bake for 1hr at 170c (150 fan). check the cake after 50 minutes by placing a skewer all the way through - if it comes out clean, it’s ready! if not, bake until it’s done (you can loosely cover with foil if it’s browning too much). 12. once baked, remove from the oven and carefully peel the baking paper away. allow to cool on a wire rack for at least 15 minutes before slicing. 13. generously dust with icing sugar and slice into thick pieces. 14. serve whilst warm with a dollop of greek yogurt or crème fraiche (or leave just as it is!). 15. if you love the extra sweetness, you can drizzle with honey too… enjoy xxx🍌🍯 #EasyRecipes #bananabread #yogurt #cake #sweettreat
