Homemade Pho Ingredients * 4 lb beef marrow * 1 lb beef brisket or chuck roast * 12 cups water * 2 yellow onion * 4-inch piece fresh ginger * 3 whole star anise * 2 cinnamon sticks * 5 whole cloves * 1 tablespoon coriander seeds * 1 teaspoon fennel seeds * 2 tablespoons soy sauce or tamari * 1 tablespoon + 1 teaspoon of brown sugar * 1½ teaspoons kosher salt 1. Clean the beef bones Put the bones in a large pot, cover with water and boil for 10 minutes. Drain them and rinse the bones and pot. This removes a lot of the impurities and gives you a cleaner broth. 2. Char the onion and ginger Put the onion and ginger under the broiler or directly in a dry pan until they’re darkly charred in spots, about 5–10 minutes. 3. Toast your spices In a dry pan over medium heat, toast the star anise, cinnamon, cloves, coriander and fennel for 1–2 minutes, until very fragrant. Don’t burn them. 4. Start the broth Put the cleaned bones back into the pot with: •	12 cups fresh water ( or till it’s filled) •	Charred onion •	Charred ginger •	Toasted spices •	1½ lb brisket/chuck Bring it just to a boil, then immediately reduce it to a very gentle simmer. Skim off foam and fat that rises to the surface. 5. Simmer Cook uncovered at a very gentle simmer for about 4 hours. ( 200 degrees ) After 2 hours, check the brisket. Once it’s fork-tender, remove it, let it cool and refrigerate it. Leave the bones simmering for the remaining time. Add more boiling water to return to where it was when it first started if the water level lowered 6. Season Strain the broth and discard the bones, onion, ginger and spices. Add: •	2 tbsp soy sauce •	1 tbsp + 1 tsp sugar •	1½ tsp kosher salt Taste it and adjust the salt and soy sauce
