Please educate me. I was told by a “food scientist” that baking chicken in that hot of an oven causes the muscle fibers to over contract leading to tough chicken, and that lower temps avoided that. But I’ve seen so many recipes like yours that use high temp. What is the science behind high versus low temp and which is actually best?
