@alexskitchenbangers: BBQ chicken quesadillas with caramelised onions These are SO good and such an easy dinner to make 🤌🏼 They’ve got smoky bbq chicken, melted cheese, sweet balsamic onions & a lil ranch drizzle to finish. Ingredients (serves 2): 250g chicken breast, diced
1 tsp smoked paprika
½ tsp garlic granules
Salt
Black pepper
60g BBQ sauce
1 onion, finely sliced
1 tsp balsamic vinegar
Pinch of salt
4 mini tortilla wraps
80g mozzarella, grated
15g ranch dressing
1-2 tsp hot water, to loosen
1-2 sprigs fresh parsley, chopped
💞Add the sliced onion to a pan over medium heat with a pinch of salt and cook stirring regularly, until soft & golden. If they catch add a splash of water. Add the balsamic vinegar and cook for another 1 minute. Remove from the pan and set aside. 💞Add the chicken to the same pan & season with the smoked paprika, garlic granules, salt and black pepper. Fry until cooked through. 💞If you prefer smaller pieces of chicken, remove it from the pan, chop it more finely, then return it to the pan. 💞Add the BBQ sauce and toss. 💞Lay out the mini tortilla wraps. Spoon the BBQ chicken over one half of each wrap, then top with the mozzarella and onions. Fold over. 💞Add the quesadillas to the pan & cook for couple mins per side, until golden & the cheese has melted. 💞Mix the ranch dressing with the hot water. Drizzle the ranch over the quesadillas & finish with the parsley.
