Prepare the meat: Chop the beef chuck roast into pieces. Place it in a pot along with the flanken-style beef ribs and set aside. 2. 🇲🇽 QUESABIRRIAS CASERAS 🌮🧀❤️🥩 Ingredientes
Para la carne:
• 3 libras de beef chuck roast (carne de res para guisar), picada en trozos
• 2 libras de costillas de res estilo flanken
Para la salsa de birria:
• 2 jitomates picados
• ½ cebolla
• 5 dientes de ajo
• 10 chiles guajillos
• Pimienta negra al gusto
• Knorr de pollo al gusto
• Orégano al gusto
• Comino al gusto
• Sal al gusto
• 1 hoja de laurel
• 6 clavos de olor
• Pimientas enteras al gusto
• Un chorrito de vinagre blanco
• Agua, la necesaria
Para las quesabirrias:
• Tortillas de maíz
• Queso Oaxaca o mozzarella deshebrado
• Cebolla finamente picada
• Cilantro picado
• Salsa verde
• Limones
• Rábanos
• Consomé de birria para remojar los tacos
👩🏻🍳 Preparación paso a paso
1. Preparamos la carne: Picamos el beef chuck roast en trozos y lo ponemos en una cazuela junto con las costillas de res. Reservamos.
2. Freímos los ingredientes de la salsa: En una sartén ponemos a freír los jitomates picados, la cebolla, los dientes de ajo y los chiles guajillos hasta que estén bien cocidos.
3. Hervimos: Agregamos agua y dejamos hervir durante aproximadamente 15 minutos. Apagamos el fuego y dejamos enfriar.
4. Preparamos la salsa: Pasamos todo a la licuadora y agregamos pimienta, Knorr de pollo, orégano, comino, sal, la hoja de laurel, los clavos de olor, las pimientas enteras y un chorrito de vinagre blanco. Molemos muy bien y colamos la salsa.
5. Cocinamos la birria: Agregamos la salsa colada a la carne. Añadimos agua si es necesario, dejamos que hierva, tapamos y cocinamos a fuego bajo durante 3–4 horas, hasta que la carne esté bien suave.
6. Preparamos los acompañamientos: Deshebramos el queso Oaxaca o mozzarella y picamos finamente la cebolla y el cilantro.
7. Desmenuzamos la carne: Cuando la carne esté suave, la sacamos del caldo y la picamos o deshebramos en trocitos pequeños.
8. Armamos las quesabirrias: Pasamos las tortillas por la grasita del caldo y las ponemos en un comal caliente. Agregamos 8. queso y carne deshebrada, doblamos las tortillas y dejamos dorar hasta que queden crujientes y el queso esté derretido.
9. Servimos.
