Pumpkin Chili 🍂 Chili is an easy way to load in the protein during the cooler month. This is a fantastic twist on traditional chili, with the pumpkin adding not only a subtle sweetness and creaminess but lots of fiber, combined with just enough heat that complements the beef beautifully. It's a filling meal with a hearty serving that's sure to please everyone. Full recipe save for later! * 2 pieces bacon, chopped * 1 medium yellow onion, diced * 2 cloves garlic, minced * 1 red bell pepper, diced * 2 pounds lean ground beef, 96/4 * 2 Tbsp. chili powder * 1 Tbsp. cumin * 1 tsp. smoked paprika * 1/2 tsp. cinnamon * ½ Tbsp. salt * ¼ tsp. Nutmeg * Lots of fresh cracked pepper * 2 cans (14.5 oz. each) petite diced tomatoes, undrained * 1 can (15 oz.) pure pumpkin puree * 1 can (15 oz.) white beans, drained and rinsed * 1 cup beef broth For Serving (optional): * Greek yogurt * Shredded cheese * Chopped green onions * Fresh cilantro Instructions: Add the chopped bacon to a large pot or dutch oven over medium heat. Cook until cooked through about 3-5 minutes.. Add the onion, garlic, and bell pepper, cooking until they start to soften, about 5 minutes. Increase the heat to medium-high and add the ground beef, breaking it apart with a spoon and cooking until browned. Add the chili powder, cumin, smoked paprika, cinnamon, salt, nutmeg and pepper to the mixture and stir to evenly coat. Stir in the diced tomatoes and pumpkin puree. Mix well to ensure the pumpkin is thoroughly incorporated with the other ingredients. Add the white beans and beef broth and stir to mix together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavors, let it simmer for up to an hour. Taste the chili and adjust the seasonings as needed. If the chili is too thick, you can add a little more beef broth to reach your desired consistency. As always, let me know if you try it!!
