Chicken & tandoori rice @canarybasmati Ingredients: - 1 kg chicken ( I used thighs ) - 2 cups of basmati rice - 3 tbsps yogurt - 1 tbsp ginger & garlic paste - 2 tbsps garam masala - 3 tbsp tandoori spices - salt & pepper - an onion - 1 tsp cumin seeds - 1 stick of cinnamon - 3 cardamom pods - 2 bay leaves - 3 cloves - 4 tbsp ghee - 3 cups water - start by washing & soaking the rice for about 20 minutes - add the seasonings to the chicken & if you have time let it marinate or just place it in the oven at 180c for 40 minutes. Switch the broiler on and bake it for 10 minutes on high flipping half way through. ( you can do it in the air fryer as well ) - saute the sliced onions with the aromatics in 1 tbsp of ghee then add the rice. Give it a quick toast then add the seasoning and water. - let the rice boil on high till it starts absorbing the water. For about 7 minutes. Then drop the heat to the lowest. Cover and let it cook for 20 minutes. - once the chicken is ready. Brush it with ghee on both ends. It makes a huge difference. - top the rice with the chicken pieces. Garnish with coriander. Radish. Have it with raita and enjoy. #food #cooking #india #chicken #tandoori
