MAPLE BALSAMIC POT ROAST 🍂 Fall-apart tender, cozy, and one of those dinners that tastes like you worked way harder than you actually did. The maple doesn’t make this sweet. It just rounds out the balsamic and creates the richest, savory braising sauce. And those buttery little potatoes soaked in the sauce might be my favorite part. Maple Balsamic Pot Roast 3–4 lb chuck roast 2 tsp kosher salt 1 tsp black pepper 1½ tbsp avocado oil 1 large yellow onion, sliced 5 garlic cloves, minced 2 cups beef broth 3 tbsp balsamic vinegar 2 tbsp pure maple syrup 1 tbsp Worcestershire sauce 1 tbsp Dijon mustard 1 tsp dried thyme ½ tsp garlic powder ½ tsp onion powder Baby carrots Baby potatoes 1 tbsp butter Heat oven to 325°F. Pat the roast dry and season generously with salt and pepper. Heat avocado oil in a Dutch oven over medium-high heat and sear the roast for 4–5 minutes per side until deeply browned. Remove and set aside. Add the onion and cook for about 5 minutes. Stir in the garlic for 30 seconds. Add beef broth, balsamic vinegar, maple syrup, Worcestershire, Dijon, thyme, garlic powder and onion powder. Scrape up all those browned bits from the bottom. Return the roast to the pot, cover and braise at 325°F. After about 2½ hours, flip the roast and add the baby carrots and potatoes around it. Spoon some of the braising liquid over everything, cover and continue cooking until the vegetables are tender and the roast pulls apart easily with a fork, about 1–2 hours more. Remove the meat and vegetables. Simmer the braising liquid for 5–10 minutes to reduce slightly, then stir in 1 tbsp butter.
