Bon appétit & Happy Halloween 🎃🧠🩸 Red Velvet Brain Cake 🧠🩸 Ingredients 🗒️ For the red velvet cake: * 300g flour * 18g unsweetened cocoa powder * 180g sugar * 3 eggs * 150ml buttermilk * 120ml neutral oil * 1 tsp vanilla extract * 1 tsp white vinegar * 1 tsp baking soda * ½ tsp salt * Red gel food coloring For the filling: * 150g white chocolate * 300g cream cheese * 100g mascarpone * 1 tsp vanilla extract For the decoration: * Pink or white fondant * Red food coloring, if needed Preparation 👩🏻‍🍳 1. Preheat the oven to 170°C / 340°F. 2. In a bowl, mix the flour, cocoa powder, salt and baking soda. 3. In another bowl, whisk the eggs and sugar for about 2 minutes. 4. Add the oil, vanilla extract and buttermilk, then mix well. 5. Gradually add the dry ingredients, mixing just until combined. 6. Add red gel food coloring until you get a vibrant red color, then mix in the white vinegar. 7. Pour the batter into an 18cm / 7-inch round cake pan and bake for about 40–55 minutes. Check with a toothpick to make sure the cake is fully baked. 8. Let the cake cool completely before removing it from the pan and cutting it into 2 or 3 layers. 9. Melt the white chocolate and let it cool until lukewarm. 10. Briefly mix the cream cheese, mascarpone and vanilla extract until smooth. 11. Gradually mix in the melted white chocolate, then refrigerate the filling for 20–30 minutes. 12. Spread the filling between the cake layers, stack them and carve the cake into an oval, rounded brain shape. 13. Lightly coat the outside of the cake with a little filling to help the fondant stick. 14. Roll out the fondant and cover the cake. 15. Roll the fondant into long ropes and arrange them in winding patterns over the cake to create the brain’s folds. 16. Add a few red details for a bloody effect, then refrigerate the cake until ready to serve. Enjoy & Happy Halloween 🎃🧠🩸 #halloweenrecipe #spookyseason
