Not coming at you, just offering what I hope you find helpful. If you pre-salt your steak 30 minutes at room temp before searing, the salt not only pulls out any extra moisture, but it also seasons and penetrates the meat better; salt can’t really get through a crust. Also, 3 tablespoons of butter and splash of soy sauce added to the pan with the mushrooms will provide a deeper, richer flavor overall. 🙂

Try a 1inch cut, season it and then reverse sear first and then finish it on stove top giving it a crust
